Banana Muffins
These muffins were brought to the send-off for Elizabeth Krantz.
- 1/2 c butter
- 1/2 c brown sugar
- 2 T canola or other oil
- 3 medium sized very ripe bananas, mashed with a fork
- 1/2 c flour
- 1 1/2 c whole wheat pastry flour
- 1 t baking powder
- 1 t baking soda
- 1/4 t salt
- 1/2 t cinnamon
- 2/3 c diced dried apricots (optional)
- 2/3 c chocolate chips (optional)
- 2 eggs
- 2 T molasses
- Pre-heat oven to 350.
- Stir or sift together dry ingredients (flours through cinnamon) in a small bowl.
- Cream butter and sugar until light in a large bowl. Mix in bananas and oil.
- In a separate bowl or large cup, lightly beat the two eggs and then thoroughly mix in the molasses.
- Alternate adding egg mixture and flour mixture to the butter mixture, beating until just combined with each addition, beginning and ending with flour mixture.
- Stir in apricots and/or chocolate chips.
- Divide among 18 muffin tins or pour into a 9 x 5 " loaf pan.
- Bake ~18 min for muffins and ~50 min for a loaf.
