Banana Muffins

These muffins were brought to the send-off for Elizabeth Krantz.
  1. Pre-heat oven to 350.
  2. Stir or sift together dry ingredients (flours through cinnamon) in a small bowl.
  3. Cream butter and sugar until light in a large bowl. Mix in bananas and oil.
  4. In a separate bowl or large cup, lightly beat the two eggs and then thoroughly mix in the molasses.
  5. Alternate adding egg mixture and flour mixture to the butter mixture, beating until just combined with each addition, beginning and ending with flour mixture.
  6. Stir in apricots and/or chocolate chips.
  7. Divide among 18 muffin tins or pour into a 9 x 5 " loaf pan.
  8. Bake ~18 min for muffins and ~50 min for a loaf.
