Cheesiest Cheddar Cookies (Dog Biscuits)

These biscuits were brought to the 2011 bake sale for the MN AIDS Project.

• 1 cup barley flour (I used whole wheat)
• 1 cut oat flour (I ground old fashioned rolled oats in my food processor to make the oat flour)
• 1/2 cup ground flaxseed meal
• 1/2 tsp baking soda
• 1/2 tsp salt
• 1/2 tsp cinnamon
• 2 eggs, beaten
• 3/4 cup no-sugar-added applesauce
• 1/4 cup honey
• 1 tsp vanilla
• 1/2 cup chopped nuts, such as walnuts (I used pecans)
• 1 cup shredded cheddar cheese

1. Pre-heat oven to 375.
2. Stir together dry ingredients (flours through cinnamon) in a large bowl.
3. In a separate bowl or large cup, lightly beat the two eggs and then thoroughly mix in the applesauce, honey, and vanilla.
4. Add the wet ingredients to the dry ingredients and stir until combined.
5. Stir in nuts and cheddar cheese.
6. Drop the dough by rounded teaspoonfulls onto a cookie sheet (optional: lined with parchment paper for easier removal).
7. Bake ~15 minutes or until lightly browned. Cool thoroughly.
8. Store in an airtight container in the refrigerator, or freeze for later.
